How To Make: Greek Rotisserie Chicken & Orzo Salad!

This recipe is delicious, healthy, and super refreshing!
PS: This recipe makes about 3 servings.
Ingredients:
Salad:
1/3-1/2 Small Red Onion (Thinly Sliced)
1 Small Cucumber (Diced)
1/2 Ripe Avocado (Diced)
2 Big Handfuls Of Mixed Greens
1/4 Cup Of Orzo (Uncooked)
1 Rotisserie Chicken Breast (Diced)
1/2 Cup Of Feta Crumbles
Dressing:
The Juice Of 1/3 Of A Lemon
1/3-1/2 Cup Of Extra Virgin Olive Oil
1 TSP Of Dijon Mustard
1/2 TSP Of Honey
1/2 TSP Of Oregano
1/2 TSP Of Ground Black Pepper
1 TSP Of Salt
Directions:
Start off by starting a small pot of boiling water, to cook the orzo.
Once it is boiling, pour in the orzo and cook it for about 15-20 minutes.
While it's cooking, thoroughly wash and prep your veggies.
Thinly slice the onions, dice the cucumber and avocado, and set aside.
Feel free to also put tomatoes into this salad. They would go great in it!
Dice the chicken and crumble the feta, if it is not already crumbled, and set aside.
Into a small bowl pour in all the dressing ingredients and whisk vigorously.
It should look like this:

Once the orzo is cooked, pour it into a sieve to strain out the water.
Then into a large serving bowl, pour the veggies, followed by the orzo, chicken, and cheese.
Drizzle in the dressing and use large wooden serving spoons to mix.
Serve and enjoy!
