How To Make An: Iced Lemon Poppy Seed Loaf!

This recipe smells so good while making, baking, and eating it!

PS: This recipe makes 1 loaf.


Ingredients:

Loaf:

1 1/2 Cups Of Flour

1 TSP Of Baking Powder

1/4 TSP Of Baking Soda

1/4 TSP Of Salt

1/4 Cup Of Butter (Melted And At Room Temperature)

1/4 Cup Of Oil

1 Cup Of Sugar

3 Eggs

1 TSP Of Vanilla Extract

1 1/2 TBSP Of Lemon Zest (About 1 Whole Lemon)

2 TBSP Lemon Juice (About 1 Whole Lemon)

1/2 Cup Of Sour Cream Or Buttermilk

2 TBSP Of Poppy Seeds

Icing:

1 Cup Of Powdered Sugar

1 TBSP Of Lemon Juice

1 1/2 TBSP Of Milk


Directions:

Preheat your oven to 350°.

Grease a 9x5-inch loaf pan.

Into a medium sized bowl, pour the flour, baking powder, baking soda, and salt.

Mix until fully combined.

Into a different, larger bowl, pour the sugar and eggs and use an electric mixer to mix them for two minutes.

Add in the melted butter and oil and mix again.

Then, add the vanilla extract, lemon zest, and lemon juice and mix again.

Next, add the sour cream and mix again.

Add in the poppy seeds and mix one more time.

Add the dry ingredients to the wet ingredients, about 1/3 of the time and mix together.

It is important to not over mix the batter.

Pour the mixture into the loaf pan and cook for 50 minutes.

After about 35 minutes, cover the pan with foil to avoid the top from burning.

Once it is done, remove the loaf from the pan and let it cool for at least an hour.

While it is cooling down you can make the icing.

Into a small bowl whisk together the icing ingredients until smooth.

Pour the icing over the loaf and let it set onto it before slicing.

Once it is ready, slice it and enjoy.
