How To Make A: Hidden-Veggie Pasta Sauce!

This recipe may be time-consuming but it's worth the wait!

PS: This recipe makes about 3-4 servings of pasta sauce.


Ingredients:

8-10 Tomatoes

1 1/2 Cup Of Carrots

1 1/2 Cup Of Cauliflower

1/3 Of A Small Onion

1 TBSP Of Oil

1 1/2 TSP Of Salt

1/2 TSP Of Black Pepper

1/2 TSP Of Italian Seasoning

1/2 TSP Of Chili Powder

1/2 TSP Of Garlic Powder


Directions:

Start off peeling, cleaning, and washing your carrots and cauliflower.

Then placed them into a pot of boiling water for at least 20 minutes, or until fork tender.

While they veggies are boiling, score the bottom of the tomatoes and placing them into another pot of boiling water for 1 minute.

Once they are done, immediately place them into a large bowl of ice water.

Then, once they have cooled down, use your hand to peel the skin off of the tomatoes.

You can discard the skins.

Once the tomatoes are all peeled, place them all into a big blender and blend until smooth.

Then pour the tomato sauce onto a saucepan to simmer and reduce for about 20 minutes.

Dice your onion and toast it on a pan, with a dash of oil, to release its flavor.

Then put the boiled carrots and cauliflower and toasted onion into the blender and blend until smooth.

Pour the veggie mixture into the sauce and mix.

Then mix in the remaining oil and spices.

Let this simmer for an additional 5 minutes.

Serve with cooked pasta and/or protein and enjoy!
